These Caramel Chocolate Chip Cookie Bars are chewy, buttery, and loaded with gooey caramel and chocolate. Made in one bowl and ready in 30 minutes, they’re the perfect easy dessert for holidays, parties, or cozy nights at home.

- 1 cup unsalted butter, melted and slightly cooled
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1½ cups chocolate chips or chocolate chunks
- ½ cup caramel sauce (store-bought or homemade)
- Optional: flaky sea salt for finishing
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla extract; whisk until fully combined.
- Stir in the flour, baking soda, and salt until just combined. Do not overmix.
- Fold in chocolate chips or chunks, reserving a small handful for topping.
- Spread dough evenly in the prepared pan. Sprinkle reserved chocolate chips on top.
- Bake for 25–30 minutes or until edges are set and center is slightly soft.
- Let cool in the pan for 10 minutes. Drizzle warmed caramel sauce over the top and sprinkle with flaky sea salt if using.
- Cool completely before lifting from the pan and slicing into squares.
