Description

Hello, food lovers! 🍪 If you’re craving something both indulgent and nutritious, you’re in for a treat! Today, we’re diving into the world of Chocolate Chip Carrot Muffins, a delightful recipe that combines the sweet richness of chocolate chips with the wholesome goodness of grated carrots. Perfect for breakfast, snack time, or even dessert, these muffins will satisfy both your sweet tooth and your desire for something healthy. Let’s get started on this delicious journey!

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 ½ cups grated carrots
  • ¾ cup semi-sweet chocolate chips, plus extra for topping

Feel free to substitute whole wheat flour for all-purpose flour to add some extra fiber. You can also use dairy-free chocolate chips or reduce the sugar if you’re looking for a healthier option.

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate large bowl, beat together the eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the grated carrots and chocolate chips until evenly distributed in the batter.
  • Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
  • Sprinkle a few extra chocolate chips on top of each muffin for added texture and flavor.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Don’t overmix the batter! Overmixing can cause the muffins to become dense. Stir just until the ingredients are combined.
  • Grate your carrots finely for a smoother texture. Larger carrot pieces can sometimes affect the overall consistency of the muffins.
  • If you like a crunchy topping, sprinkle some chopped nuts or oats along with the chocolate chips before baking.
