  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts (optional)

Optional Ingredient Substitutions:

  • For a dairy-free option: Use dairy-free chocolate chips.
  • To make it gluten-free: Substitute the all-purpose flour with a gluten-free flour blend.
  • Nut allergies: Simply omit the walnuts or replace them with seeds like pumpkin or sunflower seeds.

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  • In another large bowl, beat together the eggs, vegetable oil, brown sugar, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can result in denser muffins.
  • Fold in the grated carrots, chocolate chips, and chopped walnuts (if using).
  • Divide the batter evenly among the prepared muffin cups, filling them about 3/4 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • When grating the carrots, use the finest side of the grater for the best texture.
  • Make sure not to overmix the batter, as this can make the muffins dense instead of light and fluffy.
  • For extra moist muffins, you can add a tablespoon of applesauce or yogurt to the batter.
