  • 1 large egg yolk
  • 2 tbsp ice water
  • 1 cup fresh raspberries
  • 1/4 cup raspberry compote
  • 1 1/2 cups dark chocolate chips
  • 1 cup heavy cream
  • Chocolate shavings for garnish

Instructions

  1. Crust: In a food processor, blend flour, cocoa, sugar, and salt. Add butter and pulse until crumbly. Mix in egg yolk and ice water until dough forms. Press into a 9-inch tart pan. Chill for 30 minutes.
  2. Bake: Preheat oven to 375°F (190°C). Bake the crust for 20 minutes. Cool.
  3. Layer: Spread raspberry compote, then raspberries on the crust.
  4. Chocolate Layer: Heat cream until simmering. Pour over chocolate chips, wait 5 minutes, stir until smooth. Pour over raspberries. Chill for 2 hours.
  5. Garnish: Add chocolate shavings before serving.
