Chipotle Shrimp

  • 1 pound medium raw shrimp, deveined & tail off
  • 2 to 3 tablespoons chipotle adobo sauce (to taste)
  • 2 tablespoons olive oil
  • 2 teaspoons fresh garlic, finely minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ¾ to 1 teaspoon salt (to taste)
  • 1 teaspoon oregano
  • 1 teaspoon coriander
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil for drizzling on the skillet/pan

Cilantro Lime Rice

  • 1 ½ cups long-grain basmati rice, rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 teaspoons fresh garlic, finely minced
  • 2 ½ cups water
  • 1 ½ teaspoon salt (or to taste)
  • 1 bay leaf
  • Juice of 1 lime
  • Juice of half a small lemon
  • ¼ to cup cilantro, finely chopped

Optional Toppings

  • Avocado
  • Sour cream
  • Lettuce
  • Black beans
  • Roasted corn
  • Pico de gallo

Instructions

 

Step 1: Cook the Shrimp

  1. Pat the shrimp dry with a paper towel.
  2. In a bowl, add chipotle adobo sauce, olive oil, fresh garlic, chili powder, cumin, salt, oregano, coriander, and black pepper. Mix thoroughly to coat the shrimp evenly.
  3. Heat a pan or cast-iron skillet over high heat. Once hot, drizzle olive oil and toss the shrimp in. Make sure they’re not crowded to allow a nice sear.
  4. Cook for about 8 minutes, flipping halfway for an even sear. Once cooked, remove from the pan immediately to avoid overcooking.

Step 2: Make the Cilantro Lime Rice

  1. Rinse the rice with cool water until the water runs clear to remove excess starch.
  2. In a pot over medium heat, add olive oil, butter, garlic, and rice. Stir to coat the rice with the butter and oil. Toast for 2 to 3 minutes.
  3. Add 2 ½ cups of boiling water, salt, and a bay leaf. Stir and bring to a boil. Then, lower the heat and simmer covered for 12 to 14 minutes.
  4. Turn off the heat and leave the rice covered for 10 minutes. Fluff the rice with a fork.
  5. Transfer the rice to a bowl, add lime juice, lemon juice, and cilantro. Mix and serve warm.

Step 3: Assemble Your Bowl

Assemble your bowl by starting with a bed of cilantro lime rice. Top with the cooked chipotle shrimp and add your favorite toppings, such as avocado, sour cream, lettuce, and roasted corn. Serve and enjoy!

  • Shrimp Tips: To avoid overcooking, always keep an eye on your shrimp. Once they turn pink and opaque, they’re done!
  • Rice Tips: Rinsing the rice is crucial to achieve fluffy, non-sticky rice. You can also soak the rice for 30 minutes before cooking for even better results.
