  • 1 avocado: Diced
  • ¼ cup red onion: Thinly sliced
  • ¼ cup fresh cilantro: Chopped
  • ½ cup cherry tomatoes: Halved
  • ¼ cup shredded cheddar cheese

For the Dressing:

  • ½ cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper: To taste

Instructions

Step 1: Prepare the Chicken

  1. Season the chicken: Sprinkle salt and pepper on both sides of the chicken breasts.
  2. Marinate: In a bowl, whisk together the chipotle peppers, lime juice, olive oil, minced garlic, cumin, smoked paprika, and salt. Coat the chicken breasts in this marinade and let them sit for at least 10 minutes.

Step 2: Cook the Chicken

  1. Heat a skillet: Add 1 tablespoon of olive oil to a grill pan or skillet over medium-high heat.
  2. Cook: Place the chicken in the skillet and cook for about 5 minutes on each side until the internal temperature reaches 165°F (74°C). Let the chicken rest for a few minutes before slicing it thinly.

Step 3: Prepare the Salad

  1. Combine the ingredients: In a large salad bowl, toss together the salad greens, avocado, red onion, cilantro, cherry tomatoes, and shredded cheese.

Step 4: Make the Dressing

  1. Whisk the dressing: In a small bowl, mix mayonnaise, lime juice, chipotle chili powder, garlic powder, salt, and pepper until smooth.

Step 5: Assemble the Salad

  1. Add the chicken: Place the sliced chicken on top of the salad.
  2. Drizzle with dressing: Pour the chipotle lime dressing over the salad and toss to combine.
  3. Serve and enjoy: Serve immediately, garnished with extra cilantro if desired.

Notes

  • Marinate the Chicken Longer: For deeper flavors, marinate the chicken for at least 30 minutes or even overnight.
  • Use Fresh Ingredients: Fresh lime juice and freshly chopped herbs make a big difference in the overall taste.
  • Serve Cold or Warm: This salad can be enjoyed warm or cold, making it perfect for meal prep.
