  • 2 lbs. Jumbo shrimp, peeled and deveined.
  • For the Chimichurri Sauce:
    • ½ cup fresh flat-leaf parsley leaves, stems removed.
    • ¼ cup fresh cilantro leaves, stems removed.
    • ¼ cup fresh mint leaves, stems removed.
    • 3 cloves fresh garlic, sliced.
    • ¼ cup extra virgin olive oil (choose a high-quality oil).
    • 2 Tbsps red wine vinegar or apple cider vinegar.
    • Juice and zest of one lemon.
    • 1 small red chili, seeded and chopped.
    • ¼ tsp black pepper.
    • 1 tsp sea salt.

Optional Substitutions:

  • Replace cilantro with more parsley if you dislike cilantro’s taste.
  • For a milder spice, substitute the red chili with a pinch of red pepper flakes

Instructions

Step 1: Prepare the Chimichurri Sauce

  • Place the parsley, cilantro, mint, garlic, olive oil, vinegar, lemon juice, red chili, black pepper, and sea salt in a food processor.
  • Pulse until finely chopped and well combined.

Step 2: Marinate the Shrimp

  • Pour half of the chimichurri sauce over the shrimp and toss to coat evenly.
  • Let the shrimp marinate in the refrigerator for at least 10 minutes to absorb the flavors.

Step 3: Cook the Shrimp

  • Heat a large non-stick skillet over medium heat.
  • Arrange the shrimp in a single layer in the skillet.
  • Cook for about 2 minutes per side or until they are pink and opaque.

Step 4: Serve and Enjoy!

  • Transfer the cooked shrimp to a serving platter.
