- 300g linguine or spaghetti

- 1 tbsp tomato paste

- ½ tbsp dried chilli flakes (adjust to taste)
- 1 tsp sugar (brown or white)
- Salt and pepper (to taste)
- 2 tbsp olive oil (plus extra for serving)
Prawn seasoning:
- 1 clove garlic (minced)
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp paprika (sweet or smoky)
- 1 tbsp olive oil
Optional Garnishes:
- Fresh parsley
- Extra virgin olive oil
- Parmesan cheese
Instructions
- Season the Prawns: Mix prawns with minced garlic, salt, pepper, paprika, and olive oil. Set aside for flavors to meld.
- Cook the Pasta: Boil linguine in salted water until al dente according to package instructions.
- Pan Sear the Prawns: In a heated pan, sear prawns without additional oil for 1 minute per side. Set them aside.
- Prepare the Sauce: In the same pan, add olive oil, garlic, and tomato paste. Sauté until aromatic. Add diced tomatoes, chilli flakes, sugar, salt, and pepper.
- Simmer the Sauce: Cover and simmer on low heat for 10 minutes.
- Combine and Serve: Add prawns and parsley to the sauce, then mix in drained pasta with a bit of pasta water. Toss well, garnish, and enjoy!
