Ingredients

Scale

For the Meatballs:

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon Italian seasoning

For the Spinach Alfredo Sauce:

  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste

Additional:

  • Cooked pasta, for serving

Instructions

Preheat Oven:
Preheat your oven to 400°F (200°C).

Make Meatballs:
In a large mixing bowl, combine the ground chicken, ricotta, Parmesan, egg, breadcrumbs, minced garlic, salt, pepper, and Italian seasoning. Mix well until all ingredients are fully incorporated. Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.

Bake Meatballs:
Bake the meatballs for 20-25 minutes, until they are cooked through and have a light golden color.

Prepare Sauce:
While the meatballs are baking, melt the butter in a medium saucepan over medium heat. Add the minced garlic and sauté until it becomes fragrant. Stir in the heavy cream and grated Parmesan cheese, bringing the mixture to a gentle simmer. Allow the sauce to cook for about 5 minutes, stirring occasionally, until it thickens slightly.

Finish Sauce:
Add the chopped spinach to the sauce, seasoning with salt and pepper to taste. Cook until the spinach wilts and the sauce is smooth and creamy.

Serve:
Serve the baked chicken ricotta meatballs over your favorite cooked pasta, generously topped with the spinach Alfredo sauce. Enjoy the rich and comforting flavors with each bite.

Notes

  • Use Fresh Ingredients: Fresh spinach and Parmesan will elevate the dish’s flavor and texture.
  • Don’t Overmix the Meatballs: Overmixing can result in tough meatballs. Mix until just combined.
  • Customize Your Pasta: While traditional pasta works great, consider using whole wheat or gluten-free pasta for a healthier twist.
