Ingredients
Scale
- 1 pound ground chicken
- 1 cup Parmesan cheese (freshly grated)
- 1 cup panko breadcrumbs
- 2 eggs
- 4 cloves garlic (fresh, minced)
- 1 teaspoon garlic powder
- 1 yellow onion (finely chopped)
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F and line a baking sheet with parchment paper or grease a loaf pan.
- In a large bowl, mix together ground chicken, Parmesan, panko, eggs, minced garlic, and garlic powder.
- Add the chopped onion, Italian seasoning, salt, and pepper. Mix until just combined, being careful not to overmix.
- Shape the mixture into a 9×4-inch loaf on the baking sheet or press into a loaf pan.
- Drizzle olive oil on top and smooth the surface for even browning.
- Bake for 45–50 minutes or until the internal temperature reaches 165°F.
- Let the meatloaf rest for 10 minutes before slicing to retain moisture.
- Slice and serve warm. Optional: Sprinkle additional Parmesan before serving.
Notes
- Don’t overmix the meat mixture to avoid a dense texture.
- Use a meat thermometer to ensure perfect doneness at 165°F.
- Rest the meatloaf before slicing to keep it juicy.
- Free-form baking on parchment creates a crispier crust.
- Add chicken broth or grated zucchini for extra moisture, especially if using lean meat.
- Toast the panko breadcrumbs for enhanced flavor and better absorption.
