Description

This juicy garlic Parmesan chicken meatloaf is a flavor-packed, low-fat twist on the classic comfort food. Easy to make, high in protein, and perfect for family dinners or meal prep.

Ingredients

Scale
  • 1 pound ground chicken
  • 1 cup Parmesan cheese (freshly grated)
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 4 cloves garlic (fresh, minced)
  • 1 teaspoon garlic powder
  • 1 yellow onion (finely chopped)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper or grease a loaf pan.
  2. In a large bowl, mix together ground chicken, Parmesan, panko, eggs, minced garlic, and garlic powder.
  3. Add the chopped onion, Italian seasoning, salt, and pepper. Mix until just combined, being careful not to overmix.
  4. Shape the mixture into a 9×4-inch loaf on the baking sheet or press into a loaf pan.
  5. Drizzle olive oil on top and smooth the surface for even browning.
  6. Bake for 45–50 minutes or until the internal temperature reaches 165°F.
  7. Let the meatloaf rest for 10 minutes before slicing to retain moisture.
  8. Slice and serve warm. Optional: Sprinkle additional Parmesan before serving.

Notes

  • Don’t overmix the meat mixture to avoid a dense texture.
  • Use a meat thermometer to ensure perfect doneness at 165°F.
  • Rest the meatloaf before slicing to keep it juicy.
  • Free-form baking on parchment creates a crispier crust.
  • Add chicken broth or grated zucchini for extra moisture, especially if using lean meat.
  • Toast the panko breadcrumbs for enhanced flavor and better absorption.
