Ingredients
For the Chicken:
- 1½ lbs boneless, skinless chicken tenders
- ½ cup all-purpose flour
- 2½ tsp garlic powder
- 1½ tsp onion powder
- 1 tsp Italian seasoning
- ½ tsp cayenne pepper
- ½ tsp black pepper
- ½ tsp salt
For the Marsala Sauce:
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 3 shallots, peeled and thinly sliced
- 8 oz cremini mushrooms, sliced
- 8 oz shiitake mushrooms, sliced
- 2½ tsp cornstarch
- 1 cup chicken bone broth
- 4 cloves garlic, minced
- 1 cup dry marsala wine
- 2 tbsp fresh parsley, chopped
- Grated parmesan cheese for garnish (optional)
For the Buttered Noodles:
- 1 lb egg noodles
- ¾ cup unsalted butter, cubed
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
Instructions
Step 1: Prepare the Chicken
- Combine the flour, garlic powder, onion powder, Italian seasoning, cayenne, black pepper, and salt in a large bowl.
- Dredge each chicken tender in the seasoned flour mixture, ensuring they are evenly coated. Shake off any excess flour and set aside.
Step 2: Cook the Chicken
- Heat the olive oil in a large skillet over medium-high heat until it shimmers.
- Add the chicken and cook for 3 minutes on each side, or until golden brown. Transfer the chicken to a clean plate and set aside.
Step 3: Make the Marsala Sauce
- Add the butter to the same skillet and let it melt.
- Add the shallots and mushrooms. Stir occasionally and cook for about 20 minutes, allowing them to deeply caramelize.
- Whisk together the cornstarch and chicken bone broth in a measuring cup, then set aside.
- Add the garlic to the skillet, cooking for 1 minute until fragrant.
- Deglaze the pan by pouring in the marsala wine, scraping up any browned bits. Let this cook for 5 minutes, then pour in the cornstarch mixture.
- Simmer the sauce over medium-high heat for 5-6 minutes until slightly thickened.
Step 4: Combine the Chicken and Sauce
- Return the chicken to the skillet and simmer for another 2 minutes, letting the flavors meld.
- Serve hot, pouring the sauce over the buttered egg noodles. Top with fresh parsley and parmesan if desired.

To enhance the flavor and presentation of this Chicken Marsala recipe, here are some extra tips:
- Use fresh mushrooms for the best flavor. Both cremini and shiitake varieties add depth to the sauce.
- Try using homemade bone broth if possible – it adds a richness to the sauce you can’t get from store-bought options.
- Adjust the seasoning as needed. Some prefer a bit more salt or pepper, especially in the sauce.
- Serve immediately for the best taste and texture; the sauce will thicken as it cools.
