  • 6 tostada shells – Store-bought or homemade.
  • 2 medium ripe avocados
  • 1 Tbsp fresh lime juice
  • 1/4 tsp garlic powder, divided
  • Salt and freshly ground black pepper
  • 1 (16 oz) can Rosarita Traditional Refried Beans
  • 1 (10 oz) can Rotel Diced Tomatoes & Green Chilies Mild, drained
  • 3/4 tsp ancho chili powder
  • 1/2 tsp ground cumin
  • 2 cups shredded iceberg or romaine lettuce
  • 2 cups shredded rotisserie chicken or shredded cooked chicken breasts
  • 1 cup shredded Mexican blend cheese
  • 1 cup pico de gallo, homemade or store-bought
  • 6 Tbsp Sour cream

Optional Substitutions:

  • Substitute the refried beans with black bean puree for a different texture.
  • Swap the rotisserie chicken for grilled shrimp to make a seafood variation.
  • Use gluten-free tostada shells if catering to a gluten-sensitive crowd.

Instructions

Step 1: Prepare the Guacamole

  • Using a fork, mash avocados with lime juice and 1/8 tsp garlic powder until slightly chunky.
  • Season with salt and pepper to taste, then set aside.

Step 2: Heat the Beans

  • In a small saucepan, combine refried beans, drained canned tomatoes, chili powder, cumin, and the remaining 1/8 tsp garlic powder.
  • Season with salt and pepper to taste and cook over medium-low heat, stirring frequently, until heated through (about 3-5 minutes).

Step 3: Assemble the Tostadas

  • Spread a layer of the prepared guacamole on each tostada shell.
  • Add a spoonful of the warm bean mixture.
  • Top with a handful of shredded lettuce, chicken, and cheese.
  • Finally, add a generous spoonful of pico de gallo and a dollop of sour cream.

Step 4: Serve Immediately

  • Serve the tostadas right away to maintain the crispness of the shells. Enjoy!
