  • 4 boneless skinless chicken breasts (8 ounces each)
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon white pepper
  • 8 tablespoons butter (divided)
  • 4 tablespoons extra virgin olive oil (divided)
  • 1 pound cremini mushrooms (sliced)
  • 1 medium sweet onion (cut into strips)
  • 1 tablespoon garlic (minced)
  • 1/4 cup dry sherry wine
  • 3 tablespoons all-purpose flour
  • 1 cup chicken stock
  • 1 1/2 cups heavy cream
  • 8 ounces Muenster cheese (sliced)

Optional Substitutions:

  • For a gluten-free version, replace all-purpose flour with almond or gluten-free flour.
  • Dairy-free substitutions include coconut cream instead of heavy cream and dairy-free cheese alternatives.

Instructions

Step 1: Begin by preparing the chicken. Butterfly each breast and cut in half to create eight 4-ounce pieces. Dredge the chicken in seasoned flour, made by mixing 1 cup of all-purpose flour with salt and pepper.

Step 2: Preheat the oven to 375°F and prepare a 9×13-inch casserole dish with non-stick spray. Once all ingredients are prepped, dredge the chicken in flour again, then set it aside.

Step 3: In a large sauté pan, melt half the butter with half the oil. Brown four chicken pieces at a time, about 2-3 minutes on each side. Place the browned chicken into the casserole dish.

Step 4: Sauté the mushrooms in the same pan, using 2 tablespoons of butter and 1 tablespoon of oil, until browned. Add them to the casserole dish over the chicken.

Step 5: In the same pan, add the remaining butter and oil. Cook the onions for 3 minutes, then add garlic and cook for another minute. Stir in the sherry and cook until it evaporates.

Step 6: Sprinkle the remaining flour into the pan and cook for 2 minutes. Add chicken stock, stirring and cooking for an additional 2 minutes, followed by the heavy cream. Cook until the mixture is hot and bubbling.

Step 7: Pour the cream mixture over the chicken and mushrooms. Top with Muenster cheese slices, cover with parchment paper and foil, then bake for 20 minutes. Broil to brown the cheese, and your Chicken Gloria is ready to serve!
