  • Chicken: 1 recipe Chipotle Chicken (or your preferred variation)
  • Rice: 4 cups of cooked rice (white, brown, or cauliflower), seasoned with salt, pepper, and lime
  • Shredded Cheese: 1 ½ cups of sharp Monterrey or pepper Jack cheese
  • Lettuce: 1 ½ cups of chopped Romaine or iceberg lettuce
  • Black Beans: 1 (15 oz.) can, rinsed, drained, and warmed
  • Cherry Tomatoes: 1 cup, halved (or 2 chopped Roma tomatoes)
  • Fresh Corn: Kernels from 2 cobs
  • Cilantro: 1-2 tablespoons, finely minced
  • Avocado Crema:
    • 1 medium avocado
    • ½ cup sour cream or Greek yogurt
    • 2 tablespoons mayonnaise
    • 1 tablespoon lime juice
    • ½ teaspoon salt
    • ¼ teaspoon cumin
    • ¼ teaspoon garlic powder

Optional Toppings:

  • Chopped pineapple
  • Mangos
  • Lime wedges
  • Tortilla chips
  • Pico de gallo
  • Salsa
  • Sour cream
  • Hot sauce

Instructions

Step 1: Prepare the Chicken

Follow your recipe for chipotle chicken or substitute it with your preferred style (grilled, shredded, or baked). Let the chicken rest or marinate for optimal flavor.

Step 2: Cook the Rice

While the chicken is resting, cook your rice (white, brown, or cauliflower). Season it with salt, pepper, and a splash of lime juice to bring out the fresh flavors.

Step 3: Make the Avocado Crema
