- 120 g (4.5 oz) Rice vermicelli noodles (dry): Soaked and drained

- 10–12 Green beans: Halved for a fresh crunch
- 1 Red chili pepper: Thinly sliced for heat (optional)
- 2–3 Spring onions: Cut into 2” pieces for garnish
- 2–3 tbsp Vegetable oil: For frying
Stir Fry Sauce:
- 2 tbsp Light soy sauce
- 2 tbsp Oyster sauce
- 1 tsp Dark soy sauce
- 1 tsp Sesame oil
- ¼ tsp White pepper
Chicken Marinade:
- 1 tbsp Light soy sauce
- 1 tsp Sesame oil
- ¼ tsp White pepper
Instructions
Step 1: Soak the Noodles
- Soak the rice noodles in warm water for about 4-5 minutes until softened. Drain and set them aside.
Step 2: Prepare the Chicken
- Thinly slice the chicken breast or thigh and marinate it with soy sauce, sesame oil, and white pepper. Let it sit for a few minutes while you prepare the vegetables.
Step 3: Prepare the Vegetables
- Slice the onions, spring onions, and red chili pepper thinly. Julienne the carrots and cut the green beans in half.
Step 4: Stir Fry the Chicken
- Heat a wok or skillet over medium-high heat and add 2 tablespoons of vegetable oil. Once hot, add the marinated chicken slices and stir fry for 1-2 minutes until fully cooked.
Step 5: Add Vegetables
