For the Sauce:

  • 1 ½ cups chicken broth
  • 1 cup half and half
  • ½ chicken bouillon cube
  • 1 teaspoon hot sauce
  • 1 teaspoon mustard powder
  • ½ teaspoon EACH: onion powder, garlic powder, parsley
  • ¼ teaspoon paprika

For the Chicken, Orzo, and Cheese:

  • 12 tablespoons olive oil
  • 1 lb. boneless skinless chicken breast (tenderized and cut into strips)
  • Salt and pepper to taste
  • 1 ½ teaspoons Italian seasoning
  • 3 cups broccoli florets
  • ⅓ cup dry white wine (optional)
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • ¾ lb. orzo (or 1 lb. if you prefer more pasta)
  • 1 ½ cups cheddar cheese
  • 3 tablespoons Parmesan cheese

Optional Substitutions:

  • For dairy-free options, substitute the half and half with coconut milk or almond milk.
  • To make the dish gluten-free, use a gluten-free orzo substitute.

Instructions

Step 1: Prepare the Sauce

In a large measuring cup, combine the chicken broth, half and half, chicken bouillon cube, hot sauce, mustard powder, onion powder, garlic powder, parsley, and paprika. Set aside.

Step 2: Tenderize and Season the Chicken

Cover the chicken breasts with saran wrap and use a meat mallet to tenderize both sides. Cut the chicken into strips and season with salt, pepper, and Italian seasoning.

Step 3: Sear the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes per side, until golden and cooked through. Remove the chicken from the skillet and set aside.

Step 4: Prepare the Orzo

While the chicken cooks, bring a large pot of water to a boil for the orzo. Once boiling, add salt (I use ½ tablespoon of kosher salt) and cook the orzo for 1 minute less than what is indicated on the package instructions. Add the broccoli florets during the last 3 minutes of cooking. Drain and set aside.

Step 5: Make the Sauce

In the same skillet used to cook the chicken, add the white wine and set the heat to medium. Scrape the bottom and sides of the skillet with a silicone spatula to incorporate the flavors into the sauce. Simmer for 3-4 minutes until reduced by half. Then, add the butter and garlic, cooking for 1 minute. Stir in the flour and cook for 2 minutes, continuously stirring to prevent lumps.

Step 6: Combine the Sauce and Orzo

Gradually pour in the sauce mixture from Step 1, stirring constantly. Bring to a boil, then reduce to a simmer. Continue stirring for a few minutes until the sauce thickens slightly. Gradually add in the cheddar and Parmesan cheese, stirring until fully melted.

Step 7: Mix Everything Together

Add the cooked orzo and broccoli to the sauce. Stir to combine, and continue to cook for 1-2 minutes as the orzo absorbs the sauce. Add the chicken back into the skillet, cover, and heat through. Serve warm and enjoy!

  • Fresh Ingredients: Whenever possible, use fresh broccoli and freshly grated cheese for optimal flavor.
