Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, chives, melted butter, flour, garlic powder, onion powder, salt, and pepper. Mix well.
- Lightly beat the eggs and add them to the mixture, stirring until well combined.
- Shape the mixture into golf ball-sized puffs using a cookie scoop or hands, and place them on the prepared baking sheet.
- Lightly brush the tops with olive oil for crispiness.
- Bake in the preheated oven for 20-25 minutes or until the puffs are golden and crispy.
- Remove from the oven and let cool slightly before serving.
- Garnish with additional chives if desired and serve warm.
