4 boneless, skinless chicken breasts
4 cups baby potatoes, halved
2 cups green beans, trimmed
1 ½ cups broccoli florets
3 tbsp olive oil
3 cloves garlic, minced
1 tsp dried parsley
1 tsp dried basil
1 tsp paprika
½ tsp onion powder
Salt and black pepper, to taste
1 cup shredded mozzarella or Italian cheese blend
Fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish or tray with olive oil.
In a large bowl, toss the baby potatoes, green beans, and broccoli with olive oil, minced garlic, parsley, basil, paprika, onion powder, salt, and pepper until evenly coated.
Spread the seasoned vegetables evenly in the prepared baking dish. Place the chicken breasts on top and drizzle lightly with olive oil. Season again with herbs and spices.
Bake uncovered for 35–40 minutes, or until the chicken reaches 165°F (74°C) and the vegetables are tender.
Sprinkle shredded mozzarella or Italian cheese blend evenly over the chicken and vegetables. Bake for an additional 5–10 minutes until the cheese is melted and golden brown.
Remove from the oven, garnish with chopped fresh parsley, and serve hot.
