- 1 tsp paprika
- ½ tsp onion powder
- Salt and black pepper, to taste
- 1 cup shredded mozzarella or Italian cheese blend

Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish or tray with olive oil.
- In a large bowl, toss the baby potatoes, green beans, and broccoli with olive oil, minced garlic, parsley, basil, paprika, onion powder, salt, and pepper until evenly coated.
- Spread the seasoned vegetables evenly in the prepared baking dish. Place the chicken breasts on top and drizzle lightly with olive oil. Season again with herbs and spices.
- Bake uncovered for 35–40 minutes, or until the chicken reaches 165°F (74°C) and the vegetables are tender.
- Sprinkle shredded mozzarella or Italian cheese blend evenly over the chicken and vegetables. Bake for an additional 5–10 minutes until the cheese is melted and golden brown.
- Remove from the oven, garnish with chopped fresh parsley, and serve hot.
