- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ½ cup French fried onions (optional, for topping)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
- In a large bowl, whisk together the cream of chicken soup, French onion soup, and chicken broth until smooth.
- Stir in uncooked rice, garlic powder, black pepper, and shredded rotisserie chicken until evenly combined.
- Pour the mixture into the prepared casserole dish and spread evenly.
- Cover tightly with aluminum foil and bake for 45 minutes.
- Remove the foil and sprinkle shredded mozzarella and cheddar cheese evenly on top.
- Return to the oven and bake uncovered for another 15–20 minutes, until cheese is melted and bubbly, and rice is tender.
- For added crunch, sprinkle French fried onions on top during the last 5 minutes of baking.
- Garnish with chopped fresh parsley and serve hot.
