  • 1 ½ cups long-grain white rice, uncooked

  • 1 (10.5 oz) can French onion soup
  • 1 ¾ cups low-sodium chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup French fried onions (optional, for topping)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
  2. In a large bowl, whisk together the cream of chicken soup, French onion soup, and chicken broth until smooth.
  3. Stir in uncooked rice, garlic powder, black pepper, and shredded rotisserie chicken until evenly combined.
  4. Pour the mixture into the prepared casserole dish and spread evenly.
  5. Cover tightly with aluminum foil and bake for 45 minutes.
  6. Remove the foil and sprinkle shredded mozzarella and cheddar cheese evenly on top.
  7. Return to the oven and bake uncovered for another 15–20 minutes, until cheese is melted and bubbly, and rice is tender.
  8. For added crunch, sprinkle French fried onions on top during the last 5 minutes of baking.
  9. Garnish with chopped fresh parsley and serve hot.
