Here’s everything you need to create this delicious Cheesy Huevos Rancheros Casserole. The recipe is flexible, so feel free to make substitutions as per your dietary requirements.

  • 30 oz canned black beans, drained
  • 3 cups medium, chunky red salsa (such as La Victoria)
  • 34 cups Mexican cheese blend (adjust based on preference)
  • 68 large eggs (depending on serving size)
  • 24 corn tortillas
  • Fresh chopped cilantro, for garnish
  • Sliced green onion, for garnish
  • Chopped avocado, for garnish

Substitutions:

  • To make it vegan, replace cheese with vegan cheese or skip it altogether.
  • You can use whole wheat tortillas for a healthier option or flour tortillas if preferred.

Instructions

 

  1. Preheat your oven to 400°F. Grease a 9×13 casserole dish to prevent sticking.
  2. Create the base layer: Layer 8 tortillas on the bottom of the casserole dish. Spread one cup of salsa evenly on top. Sprinkle with half of the drained black beans and a third of the cheese.
  3. Build the second layer: Add another layer of tortillas, followed by the remaining beans and another third of the cheese. Pour another cup of salsa on top.
  4. Top with tortillas and create spaces for the eggs: Place the last set of tortillas on top, spread with the final cup of salsa. Using the back of a spoon, create shallow holes in the salsa and cheese where the eggs will sit.
  5. Add eggs: Crack an egg into each of the shallow spaces you created. Be careful not to break the yolk!
  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes until the egg whites are set. If the eggs need more time, cook in 5-minute increments.
  7. Serve: Remove the casserole from the oven, allow it to cool for a few minutes, and garnish with fresh cilantro, green onions, and chopped avocado.

Notes

  • For a crispier texture, lightly toast the tortillas before layering them in the casserole dish.
  • For extra flavor, add sautéed onions and bell peppers between the layers of tortillas and beans.
