Ingredients

Scale

  • Rice:
    • 2 cups of pre-cooked brown or white basmati rice (or make your own).
    • 2 teaspoons lime juice.
    • ¼ cup chopped cilantro.
    • Salt to taste.
  • Steak:
    • 1 pound skirt, flank, or bavette steak (or any quick-cooking cut).
    • Salt and pepper to taste.
    • 1 teaspoon smoked paprika.
    • 1 teaspoon cumin.
    • Olive oil for cooking.
  • Vegetables:
    • 1 cup sweet corn, canned or fresh.
    • 1 cup black beans, canned, drained, and rinsed.
    • 1 head romaine lettuce, shredded.
    • 12 cherry tomatoes, quartered.
    • 1 avocado, diced.
    • ⅓ cup cotija or feta cheese, crumbled.
  • Optional Toppings:
    • 4 tablespoons sour cream.
    • 4 tablespoons salsa.
    • Tortilla chips for added crunch.

Substitution Options:

  • Allergens: Swap cotija cheese for a dairy-free alternative.
  • Low-Carb: Use cauliflower rice instead of basmati.

Instructions

Step 1: Prepare the Rice

  • In a skillet over medium heat, warm the pre-cooked rice.
  • Mix in lime juice, chopped cilantro, and salt to taste.
  • Once warmed, transfer to a bowl and keep it in the oven on low to stay warm.

Tip: Adding lime juice and fresh cilantro enhances the rice’s flavor, making it a refreshing base for the other ingredients.

Step 2: Season and Cook the Steak

  • Rub the steak with olive oil and generously season it with salt, pepper, smoked paprika, and cumin.
  • In a large skillet over high heat, sear the steak for about 3 minutes on each side, or until a crispy, charred crust forms.
  • Let the steak rest for about 5 minutes before slicing it thinly against the grain.

Pro Tip: Resting the steak is essential. This allows the juices to redistribute, ensuring each bite is tender and juicy.

Step 3: Warm the Vegetables

  • In the same skillet, add a little more olive oil if necessary and sauté the sweet corn and black beans over medium heat until just warmed through.
  • Season lightly with salt and pepper.

Note: Warming the vegetables in the same skillet infuses them with the leftover flavors of the steak.

Step 4: Assemble the Bowls

  • Divide the warm rice among four serving bowls.
  • Top each bowl with shredded lettuce, sliced steak, corn, beans, quartered cherry tomatoes, diced avocado, and crumbled cheese.
  • Finish with a dollop of sour cream, a spoonful of salsa, and a few crunchy tortilla chips if desired.

Notes

  • Choosing the Right Steak: Skirt or flank steak works best due to their tenderness when cooked quickly over high heat. Avoid overcooking as these cuts can become tough.
  • Marinating for Flavor: If you have time, marinate the steak for a few hours in lime juice, garlic, and spices for extra depth of flavor.
  • Serving Suggestions: Serve with a side of lime wedges to enhance the fresh, zesty flavors.
