Description
Caramel Ritz Cracker Christmas Cookies are sweet-and-salty no-bake treats made with caramel-filled Ritz cracker sandwiches dipped in white chocolate and topped with festive sprinkles.

1/2 cup caramel sauce (or melted caramel candies)
1 cup white chocolate chips (or white candy melts)
1 tablespoon vegetable oil
Red, white, and green festive sprinkles (to decorate)
Instructions
Line a baking sheet with parchment paper.
Place a dollop of caramel sauce on 12 Ritz crackers, then top each with another cracker to form a sandwich and press lightly to secure.
Combine white chocolate chips and vegetable oil in a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until smooth and fully melted.
Dip each caramel-filled cracker sandwich into the melted white chocolate to coat evenly, let excess drip off, and place on the prepared baking sheet.
Immediately top with red, white, and green sprinkles while the coating is still wet.
Let the cookies set at room temperature or refrigerate briefly until firm.
Notes
Use a small amount of caramel so it doesn’t squeeze out when sandwiching the crackers.
Add vegetable oil to thin the white chocolate for smoother dipping and a shinier finish.
Work in batches so you can add sprinkles before the coating sets.
