Ingredients
Scale
1 tube of refrigerated pizza dough (or homemade)
1/3 cup prepared pesto
1 1/2 cups mozzarella cheese, shredded
1 large handful of fresh basil leaves
6–7 large grape tomatoes, sliced
1/2 red onion, thinly sliced
1/2 cup balsamic vinegar
Optional substitutions:
For a gluten-free option, use a gluten-free pizza base.
Substitute vegan cheese for a dairy-free version.
If you don’t have grape tomatoes, cherry tomatoes work just as well.
Instructions
Step 1: Prepare the Dough
Preheat the oven according to the pizza dough directions (typically 425°F).
Roll out the pizza dough onto a baking sheet lined with parchment paper.
Step 2: Make the Balsamic Reduction
Pour the balsamic vinegar into a small saucepan and place over medium-low heat.
Stir occasionally until the vinegar reduces and thickens enough to coat the back of a spoon (about 15-20 minutes).
Step 3: Assemble the Pizza
Spread the prepared pesto evenly over the pizza dough.
Sprinkle with 1 cup of shredded mozzarella cheese.
Evenly distribute the fresh basil leaves, sliced tomatoes, and red onions over the base.
Top with the remaining half cup of mozzarella.
Step 4: Bake the Pizza
Place the pizza in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
Step 5: Finishing Touches
Remove the pizza from the oven and slice into pieces.
Drizzle the balsamic reduction over each slice before serving.
Notes
Use Fresh Ingredients: Always opt for fresh basil and high-quality mozzarella cheese for the best flavor.
Prevent Sogginess: Pat the tomato slices with a paper towel to remove excess moisture before adding them to the pizza.
Customize Your Cheese: Try using burrata or smoked mozzarella for a unique twist on the traditional Caprese Pizza.
