Ingredients
Scale
- 1½ pounds bacon, thinly sliced
- 1 pound breakfast sausage
- 1¼ pounds cheddar cheese, shredded
- 30 ounces frozen shredded hash browns
- ⅓ cup bacon grease
- ½ cup butter (1 stick)
- Kosher salt and black pepper, for seasoning
- ½ cup green onions, chopped
- 4 ounces cream cheese, cubed
- 15 large eggs
- 1¼ teaspoons seasoning salt
- 1 teaspoon onion powder
- 15 large flour tortillas
For serving:
- Chipotle Mayo (see recipe)
- Avocado slices
- Salsa
- Cilantro (optional)
Instructions
Step 1: Cook the Bacon and Sausage
- Bake the bacon: Preheat the oven to 400°F and bake the bacon on a sheet for 15 minutes until crispy. Reserve the bacon grease.
- Brown the sausage: Cook the sausage in a skillet until fully browned. Set aside.
Step 2: Prepare the Hash Browns
- Heat the reserved bacon grease and butter in a skillet.
- Add frozen hash browns, pressing them into a pancake shape.
- Cook until crispy on both sides.
Step 3: Scramble the Eggs
- Whisk eggs, seasoning salt, onion powder, and pepper.
- Cook the eggs slowly on low heat for soft, creamy texture.
- Stir in the cream cheese until slightly melted.
Step 4: Assemble the Burritos
- Layer the ingredients: Spread a layer of cheese, hash browns, eggs, sausage, and bacon on each warmed tortilla.
- Fold the burrito: Wrap tightly by folding the sides over and rolling.
Notes
- Use freshly shredded cheese: Pre-shredded cheese contains anti-caking agents that prevent smooth melting. Shredding your own cheese ensures a creamier texture.
- Prep in bulk: This recipe makes 15 burritos, perfect for meal prepping. Store them in the fridge or freeze for a quick breakfast on the go.
- Vary your fillings: Add veggies like bell peppers or mushrooms for a twist.
