Instructions
- Preheat the oven to 350°F (175°C). Cream butter and sugar until light and fluffy.
- Beat in the egg and vanilla until smooth and well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture and mix until a soft dough forms.
- Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet. Slightly flatten each mound and bake for 10–12 minutes until edges are lightly golden. Let cool completely.
- For the pastry cream, heat milk in a saucepan until steaming. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
- Slowly pour warm milk into the egg mixture while whisking constantly. Return to the saucepan and cook over medium heat, stirring continuously, until thickened.
- Remove from heat, stir in vanilla and butter, and allow to cool completely.
- To make the ganache, heat cream until simmering, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth and glossy.
- Assemble the cookie bites by spooning or piping pastry cream onto each cooled cookie base. Drizzle or spoon ganache over the cream layer.
- Chill the assembled bites for 20–30 minutes to set before serving.
