2 tablespoons cornstarch
1 teaspoon vanilla extract
1 tablespoon unsalted butter
½ cup heavy cream
¾ cup semi-sweet chocolate chips
Instructions
Preheat the oven to 350°F (175°C). Cream butter and sugar until light and fluffy.
Beat in the egg and vanilla until smooth and well combined.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture and mix until a soft dough forms.
Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet. Slightly flatten each mound and bake for 10–12 minutes until edges are lightly golden. Let cool completely.
For the pastry cream, heat milk in a saucepan until steaming. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
Slowly pour warm milk into the egg mixture while whisking constantly. Return to the saucepan and cook over medium heat, stirring continuously, until thickened.
Remove from heat, stir in vanilla and butter, and allow to cool completely.
To make the ganache, heat cream until simmering, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth and glossy.
Assemble the cookie bites by spooning or piping pastry cream onto each cooled cookie base. Drizzle or spoon ganache over the cream layer.
Chill the assembled bites for 20–30 minutes to set before serving.
