- 1 tsp baking soda

- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup blueberry jam
- Purple food coloring (optional)
- ¼ cup granulated sugar for sprinkling
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl until no lumps remain.
- Beat softened butter with both sugars for 2-3 minutes until light and fluffy.
- Mix in egg and vanilla until just combined. Add purple food coloring if desired.
- Fold flour mixture into butter mixture until just incorporated. Dough will be slightly sticky.
- Scoop 2 tablespoons of dough, flatten into a disk. Place 1 teaspoon jam in center. Wrap dough around jam, sealing edges completely.
- Roll filled balls in granulated sugar. Place 2 inches apart on prepared sheets.
- Bake 10-12 minutes until edges set but centers still look slightly underdone.
- Let cookies rest on pan for 5 minutes before transferring to cooling rack.
Notes
- Room temperature ingredients mix better – set butter and egg out 30 minutes early
- Don’t overmix dough to keep cookies tender
- Seal jam pockets well to prevent leaking
- Chill filled cookies for 10 minutes before baking for best results
- Cookies continue cooking on hot pan – don’t overbake
