Description
Soft chocolate cookies with hidden blueberry jam centers that create pockets of fruity surprise in every bite. These bakery-style treats feature crispy sugar-sparkled edges and fudgy centers.
Ingredients

1½ cups all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
¼ cup brown sugar
1 large egg
1 tsp vanilla extract
½ cup blueberry jam
Purple food coloring (optional)
¼ cup granulated sugar for sprinkling
Instructions
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl until no lumps remain.
Beat softened butter with both sugars for 2-3 minutes until light and fluffy.
Mix in egg and vanilla until just combined. Add purple food coloring if desired.
Fold flour mixture into butter mixture until just incorporated. Dough will be slightly sticky.
Scoop 2 tablespoons of dough, flatten into a disk. Place 1 teaspoon jam in center. Wrap dough around jam, sealing edges completely.
Roll filled balls in granulated sugar. Place 2 inches apart on prepared sheets.
Bake 10-12 minutes until edges set but centers still look slightly underdone.
Let cookies rest on pan for 5 minutes before transferring to cooling rack.
Notes
Room temperature ingredients mix better – set butter and egg out 30 minutes early
Don’t overmix dough to keep cookies tender
Seal jam pockets well to prevent leaking
Chill filled cookies for 10 minutes before baking for best results
Cookies continue cooking on hot pan – don’t overbake
Use thick jam rather than runny preserves
Stick to 1 teaspoon jam maximum per cookie
Store in airtight container up to 7 days refrigerated
