Description

Blueberry breakfast quesadillas are a quick, cheesy, and fruity morning recipe made with fresh blueberries, melted cheese, and golden tortillas, perfect for breakfast or brunch.


Ingredients

  • 4 medium flour tortillas
  • 1 cup shredded mozzarella cheese (or Monterey Jack)
  • 1 cup fresh blueberries
  • 1 tablespoon butter
  • 1 tablespoon honey (optional, for drizzling)
  • Fresh cilantro for garnish

Instructions

  1. Lightly butter one side of each tortilla.
  2. Place one tortilla in a skillet over medium heat, butter side down.
  3. Sprinkle half the tortilla with shredded cheese and top with fresh blueberries.
  4. Fold the tortilla in half and cook for 2–3 minutes per side until golden brown and cheese melts.
  5. Repeat with the remaining tortillas.
  6. Slice into wedges, drizzle with honey if desired, and garnish with cilantro.

  • Whole wheat or gluten-free tortillas can be substituted.
