Ingredients

Scale

  • 8 flour tortillas (or corn tortillas, for a gluten-free option)

Filling:

  • 1 lb ground beef
  • 2 tablespoons taco seasoning
  • ¼ cup water
  • 4 tablespoons enchilada sauce
  • 8 oz refried beans (½ can)
  • ½ cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)

Topping:

  • 4 tablespoons enchilada sauce
  • ½ cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)

Garnishes (optional):

  • 1 roma or beefsteak tomato, seeds removed and diced
  • 1 small red onion, diced
  • ¼ cup black olives, sliced
  • ¼ cup sour cream
  • 2 green onions, finely diced

Instructions

  1. Cook the ground beef: In a large frying pan over medium heat, cook the ground beef, breaking it up as it browns, for 5-8 minutes until fully cooked. Drain excess grease.
  2. Add seasoning: Stir in the taco seasoning, water, and enchilada sauce. Let the mixture simmer for 1-2 minutes to infuse all the flavors.
  3. Assemble the pizzas: Spread a layer of refried beans onto one tortilla, followed by a portion of the ground beef mixture. Add a layer of shredded cheese, then top with a second tortilla.
  4. Top the pizzas: Spread 1 tablespoon of enchilada sauce on the top tortilla and sprinkle with more shredded cheese.
  5. Cook the pizzas: Depending on your preferred method (air fryer, oven, or pan), cook the pizzas until the cheese melts and the tortillas become crispy.

For the air fryer method, preheat to 400°F and cook for 5 minutes. In the oven, bake at 350°F for 8-10 minutes. For the pan fry method, heat the pizza in a covered pan for 4-5 minutes.

  1. Serve: Transfer the cooked pizzas to a serving plate and top with your favorite garnishes, like diced tomatoes, red onions, black olives, sour cream, and green onions.

Notes

  • Meal Prep: You can cook the beef mixture ahead of time and store it in the fridge for up to 3 days. This makes assembling the pizzas a breeze during busy weeknights.
  • Customization: Feel free to experiment with different proteins, like shredded chicken or grilled shrimp. Veggie lovers can add sautéed bell peppers or mushrooms for extra flavor.
