- 2 cups cooked and shredded chicken breasts
- 1 large bag tortilla chips
- 1½ cups shredded cheddar cheese
- 1 cup Monterey Jack or mozzarella cheese
- 1 can (10 oz) cream of chicken soup
- 1 can Rotel tomatoes (mild or spicy, drained slightly)
- 1 can black beans (optional, drained and rinsed)
- ½ cup sour cream or Greek yogurt
- 1 tablespoon taco seasoning
- Salt and pepper, to taste
- Optional toppings: diced avocado, sliced jalapeños, pico de gallo, chopped cilantro, black olives, salsa or guacamole, lime wedges
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, cream of chicken soup, Rotel tomatoes, sour cream or Greek yogurt, taco seasoning, and black beans. Season with salt and pepper.
- Spread a layer of tortilla chips on a baking sheet or oven-safe dish.
- Spoon the creamy chicken mixture evenly over the chips.
- Sprinkle cheddar and Monterey Jack cheese evenly over the top.
- Bake for 10–12 minutes, until the cheese is melted and bubbly.
- Remove from the oven and top with pico de gallo, avocado, jalapeños, or cilantro as desired.
