- 2 cups cooked chicken breast, shredded
- 1/2 cup barbecue sauce
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- Sour cream, for serving
- Salsa, for serving
Instructions
- Toss shredded chicken with barbecue sauce until evenly coated.
- Lay out two tortillas and sprinkle half the cheddar and mozzarella cheese evenly over each.
- Top with BBQ chicken mixture, then add red onion slices and fresh cilantro.
- Place the remaining tortillas on top to form quesadillas.
