This BBQ Chicken Quesadilla recipe is quick, cheesy, and loaded with smoky barbecue flavor. Ready in just 20 minutes, it’s perfect for a weeknight dinner, game day snack, or casual gathering.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup barbecue sauce
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. Toss shredded chicken with barbecue sauce until evenly coated.
  2. Lay out two tortillas and sprinkle half the cheddar and mozzarella cheese evenly over each.
  3. Top with BBQ chicken mixture, then add red onion slices and fresh cilantro.
  4. Place the remaining tortillas on top to form quesadillas.
  5. Heat olive oil in a large skillet over medium heat. Cook each quesadilla for 3–4 minutes per side until golden brown and the cheese is melted.
  6. Let rest for 1–2 minutes before slicing into wedges.
