For the Puffs:
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 tsp salt
- 4 large eggs
For the Banana Pudding Filling:
- 2 cups milk
- 1/2 cup sugar
- 1/3 cup cornstarch
- 1/4 tsp salt
- 2 large egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 ripe banana, mashed
For the Chocolate Coating:
- 8 oz semi-sweet chocolate (or chocolate chips)
- 1 tbsp coconut oil (optional, for a smoother coating)
Instructions
- Make the Puffs
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper for easy cleanup.
- In a medium saucepan, bring water and butter to a boil over medium heat.
- Once boiling, remove from heat and stir in flour and salt until a dough forms.
- Allow the dough to cool slightly, then beat in eggs one at a time until fully smooth.
- Using a piping bag or spoon, form tablespoon-sized mounds on the baking sheet.
- Bake for 20-25 minutes until golden and puffed. Let cool completely.
- Prepare the Banana Pudding Filling
- In a saucepan, whisk milk, sugar, cornstarch, and salt over medium heat until thickened.
- In a separate bowl, beat egg yolks and slowly incorporate a small amount of the hot pudding to temper them.
- Pour the mixture back into the saucepan and cook for another 2-3 minutes.
- Remove from heat, stir in butter, vanilla extract, and mashed banana. Allow cooling.
- Fill the Puffs
- Cut a small hole at the bottom of each puff and use a piping bag to add the banana pudding filling.
- Coat with Chocolate
- Melt chocolate and coconut oil in 30-second microwave intervals, stirring until smooth.
- Dip each filled puff in chocolate and place it on parchment paper to set.
Notes
- Use fresh ingredients for the best flavor, especially ripe bananas for the filling.
- Cool the dough slightly before adding eggs to prevent them from cooking.
- For an extra smooth chocolate coating, consider adding coconut oil when melting the chocolate.
