Description

Soft, chewy Banana Bread Cookies made with ripe banana, brown sugar, and just six simple ingredients. A quick, comforting treat ready in 20 minutes.

Ingredients

Scale
  • 1 ripe banana, mashed
  • 1/2 cup brown sugar
  • 1/4 cup melted unsalted butter (or coconut oil for dairy-free)
  • 1 cup all-purpose flour (or gluten-free blend)
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • Optional: 1/2 cup chopped chocolate or walnuts
  • Optional: 1/4 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe banana until smooth.
  3. Add brown sugar and melted butter to the banana and stir until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Stir in optional mix-ins like chocolate chips, nuts, or cinnamon, if using.
  7. Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each.
  8. Bake for 8–10 minutes or until the edges are golden and centers are soft.
  9. Let cookies cool on the sheet for 2–3 minutes, then transfer to a wire rack to finish cooling.

Notes

  • Use overripe bananas for the best sweetness and texture.
  • Chill the dough for 10–15 minutes if it’s too soft before scooping.
  • Don’t overmix the dough to keep the cookies soft and tender.
  • Store in an airtight container at room temperature for up to 4 days or freeze for up to 2 months.
