Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe banana until smooth.
- Add brown sugar and melted butter to the banana and stir until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Stir in optional mix-ins like chocolate chips, nuts, or cinnamon, if using.
- Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each.
- Bake for 8–10 minutes or until the edges are golden and centers are soft.
- Let cookies cool on the sheet for 2–3 minutes, then transfer to a wire rack to finish cooling.
