Ingredients

Scale

  • 12 lasagna noodles (cooked and drained)
  • 1 pound ground turkey
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Optional substitutions:

  • Ground beef or Italian sausage can be used instead of turkey for a richer flavor.
  • Gluten-free lasagna noodles work perfectly for a gluten-sensitive option.
  • Add sautéed spinach or mushrooms for extra veggies.

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the noodles: Cook the lasagna noodles according to the package instructions. Drain and lay them flat on a piece of parchment paper.
  3. Cook the ground turkey: In a large skillet over medium heat, cook the ground turkey until no longer pink, breaking it into small crumbles. Drain any excess fat.
  4. Make the cheese mixture: In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, basil, oregano, salt, and pepper. Stir in the cooked ground turkey until well combined.
  5. Assemble the roll-ups: Spread a thin layer of the turkey and cheese mixture onto each lasagna noodle. Carefully roll up each noodle and place them seam-side down in a greased baking dish.
  6. Add the sauce: Pour marinara sauce over the roll-ups, ensuring they are well coated. Sprinkle the remaining mozzarella cheese over the top.
  7. Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Cool and serve: Let the roll-ups cool for a few minutes before serving.

Notes

  • Use whole milk ricotta cheese for a creamier texture.
  • Make ahead: Prepare the roll-ups a day before and refrigerate. Bake just before serving for a hassle-free meal.
  • Add a bit of red pepper flakes to the cheese mixture if you prefer a slight kick of heat.
