Ingredients
Scale
- 4 (6-ounce) salmon fillets (skin-on preferred)
- 1 pound asparagus spears (trimmed)
- 2 tablespoons olive oil
- 1 lemon (sliced into rounds)
- 3 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: Fresh dill, chopped parsley, or paprika
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with foil.
- Rinse and pat dry the salmon fillets. Trim the woody ends off the asparagus.
- Place a handful of asparagus spears in the center of a foil sheet and set a salmon fillet on top.
- Drizzle with olive oil and squeeze lemon juice over the top.
- Sprinkle minced garlic, salt, pepper, and optional herbs over the salmon and asparagus.
- Fold the foil over the salmon and asparagus, crimping edges to seal tightly.
- Place foil packets on the baking sheet and bake for 20–25 minutes.
- Check for doneness — the salmon should be opaque and flake easily with a fork.
Notes
- Use heavy-duty foil to prevent tearing and ensure even cooking.
- Check salmon with a thermometer — internal temperature should reach 145°F (63°C).
- Optional: Open foil and broil for 2–3 minutes for a crisp top.
- Other veggies like cherry tomatoes or zucchini can be added.
- Store leftovers in an airtight container for up to 3 days.
