Description

Quick, healthy, and delicious Baked Salmon in Foil with Asparagus — perfect for easy dinners, meal prepping, and family meals.

Ingredients

Scale
  • 4 (6-ounce) salmon fillets (skin-on preferred)
  • 1 pound asparagus spears (trimmed)
  • 2 tablespoons olive oil
  • 1 lemon (sliced into rounds)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: Fresh dill, chopped parsley, or paprika

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with foil.
  2. Rinse and pat dry the salmon fillets. Trim the woody ends off the asparagus.
  3. Place a handful of asparagus spears in the center of a foil sheet and set a salmon fillet on top.
  4. Drizzle with olive oil and squeeze lemon juice over the top.
  5. Sprinkle minced garlic, salt, pepper, and optional herbs over the salmon and asparagus.
  6. Fold the foil over the salmon and asparagus, crimping edges to seal tightly.
  7. Place foil packets on the baking sheet and bake for 20–25 minutes.
  8. Check for doneness — the salmon should be opaque and flake easily with a fork.

Notes

  • Use heavy-duty foil to prevent tearing and ensure even cooking.
  • Check salmon with a thermometer — internal temperature should reach 145°F (63°C).
  • Optional: Open foil and broil for 2–3 minutes for a crisp top.
  • Other veggies like cherry tomatoes or zucchini can be added.
  • Store leftovers in an airtight container for up to 3 days.
