- 3 fresh basil leaves, chopped
Balsamic Pepper Tomato Topping:
- 1 tablespoon olive oil
- 2 tablespoons yellow pepper, diced
- 2 tablespoons red pepper, diced
- 17 grape tomatoes, halved
- 2 tablespoons balsamic vinegar
Garnish:
- 1 tablespoon basil, chiffonade
- 1 tablespoon chives, diced
Optional substitutions:
- Use almond cheese for a dairy-free option.
- Swap red peppers with jalapeños for added spice.
Instructions
Step 1: Preheat the oven to 400°F.
Step 2: In a food processor, combine the goat cheese, cream cheese, parmesan cheese, olive oil, fresh basil, and cracked pepper. Blend until smooth.
Step 3: Spread the cheese mixture in a small baking dish, creating a slight indentation in the center for the topping.
Step 4: Bake for 15-17 minutes, or until the cheese begins to turn golden and bubbly.
Step 5: While the cheese bakes, heat a medium skillet over medium-high heat. Add olive oil and sauté the yellow and red peppers for 2-3 minutes.
Step 6: Add the grape tomatoes to the skillet and cook for an additional 3 minutes. Then, stir in the balsamic vinegar and cook for another 2 minutes. Set aside.
Step 7: Once the cheese is done baking, remove it from the oven and top it with the balsamic pepper tomato mixture.
Step 8: Garnish with chiffonade basil and diced chives.
Serve with toasted baguette slices or pita chips for dipping.
Notes
- Tip 1: Always use fresh basil for a more aromatic flavor.
- Tip 2: For a creamier texture, let the cheese sit at room temperature for about 10 minutes before blending.
- Tip 3: The Balsamic Pepper Tomato topping can be made ahead of time and stored in the refrigerator for up to 2 days.
