  • Fish Fillets: 1 large fillet (choose firm white fish like cod or halibut)
  • Paprika: 1 teaspoon
  • Italian seasoning: 1 teaspoon
  • Cajun seasoning: 1 teaspoon (or substitute with Old Bay or Creole seasoning)
  • Chili flakes: ½ teaspoon
  • Salt: ½ teaspoon
  • Black Pepper: ½ teaspoon
  • Cooking Oil: 3 tablespoons (olive oil recommended)

For the Tomato and Olive Mixture:

  • Cherry Tomatoes: 2 cups, halved
  • Olives: ¼ cup, pitted and sliced
  • Fresh Parsley: 2 sprigs
  • Fresh Thyme: 2 sprigs
  • Garlic Cloves: 3, minced
  • Seasoning Mix: ½ teaspoon (from the above fish seasoning mix)
  • Water: 2 tablespoons
  • Salted Butter: 3 tablespoons
  • Pinch of Salt and Pepper

Instructions

Step 1: Seasoning the Fish

In a small bowl, mix all the ingredients for the fish seasoning: paprika, Italian seasoning, Cajun seasoning, chili flakes, salt, and black pepper. Save 1 teaspoon of the seasoning mix for the tomatoes.

Step 2: Preparing the Fish

Rub both sides of the fish fillet with the seasoning mix. Ensure it is evenly coated for full flavor.

Step 3: Searing the Fish

Heat oil on medium-high in a skillet. Sear both sides of the fish for 1 minute each until it develops a slight char. The fish shouldn’t be fully cooked at this stage.

Step 4: Preparing the Tomato and Olive Mixture

In the same pan, add the cherry tomatoes, olives, parsley, thyme, garlic, and the saved teaspoon of seasoning. Sauté for 3 minutes until the tomatoes start to soften.

Step 5: Adding the Fish to the Oven

Place the fish fillet in the middle of the pan, add the butter on top, and transfer the pan to a preheated oven at 400°F. Bake for 10 minutes until the fish is cooked through and flakes easily.

Step 6: Serving
