- ½ avocado (sliced)
- 4 slices mozzarella cheese
- 4 cherry tomatoes (sliced in half)
- 2 slices multigrain bread (I like Ezekiel sprouted grain bread)
- A dab of butter
Optional Substitutions: For a vegan version, use your favorite plant-based cheese and butter. You can also add a sprinkle of fresh basil or a drizzle of balsamic glaze for extra flavor.
Instructions
- Butter the outside layers of the bread.
- Place one slice, buttered side down, in a frying pan heated at medium heat.
- Layer the cheese, tomato, and then the avocado on the bread.
- Place the other slice of bread on top, butter side up.
- Flip after a few minutes, ensuring each side is cooked until golden brown and the cheese is melted and gooey inside.
Notes
- Make sure to use medium heat to prevent the bread from burning while the cheese melts.
- For an even melt, cover the pan with a lid for a minute or two after flipping the sandwich.
