Description

Hello and welcome to our delicious and nutritious culinary journey! Today, we’re excited to bring you an easy and flavorful recipe – the Apple and Walnut Salad. This recipe is perfect for any season, but it truly shines in the fall when apples are at their best. Whether you’re planning a light lunch, a healthy side, or a fresh appetizer, this salad combines crisp apples, crunchy walnuts, and a delightful maple balsamic vinaigrette. Let’s dive into this simple yet elegant dish that will satisfy your taste buds while keeping your meal light and refreshing.

Ingredients

Scale

  • 5 oz spring mixed greens (spinach, arugula, or romaine)
  • 2 cups of apples, thinly sliced (Granny Smith or Honeycrisp for the best results)
  • 1 cup toasted walnuts
  • 6 oz extra sharp cheddar cheese or feta, cut into small chunks
  • 1/4 cup sweetened dried cranberries
  • 1/4 to 1/3 cup Maple Balsamic Vinaigrette (recipe provided below)

Optional Substitutions:

  • For a dairy-free option, skip the cheese or use vegan cheese alternatives.
  • Replace walnuts with toasted pecans or almonds if you prefer different nuts or are allergic to walnuts.

Instructions

Step 1: Prepare the Maple Balsamic Vinaigrette

Start by making the dressing. Combine the following ingredients in a pint-sized mason jar and shake well:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp pure maple syrup (avoid using pancake syrup for the best flavor)
  • 1 tsp Dijon mustard
  • 2 tbsp finely minced red onion
  • 1 clove garlic, finely minced
  • 1/2 tsp kosher salt
  • 1/4 tsp ground pepper

Set aside your vinaigrette while preparing the salad.

Step 2: Assemble the Salad Base

In a large salad bowl, add your spring mixed greens as the base. Be sure to use fresh greens to maintain the salad’s crisp texture.

Step 3: Add the Apples and Walnuts

Thinly slice the Granny Smith or Honeycrisp apples and place them on top of the greens. Scatter the toasted walnuts evenly over the salad.

Step 4: Cheese and Cranberries

Top the salad with small chunks of extra sharp cheddar cheese or feta cheese, and sprinkle dried cranberries for added sweetness.

Step 5: Drizzle the Dressing

Right before serving, drizzle 1/4 to 1/3 cup of Maple Balsamic Vinaigrette over the salad. Toss gently to coat the ingredients evenly.

Notes

  • Freshness Matters: Always use the freshest ingredients for the best flavor. Crisp greens and apples make a significant difference.
  • Cheese Choices: For a creamier texture, opt for feta; if you prefer something sharper, go for aged cheddar.
  • Nutty Flavors: Toasting the walnuts enhances their flavor and adds a pleasant crunch to the salad.
  • Balance the Sweetness: If you want a less sweet salad, reduce the amount of dried cranberries or replace them with unsweetened alternatives.
