Spice Mix:

  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon Italian seasoning
  • ½ teaspoon fine sea salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper

Potato Wedges:

  • 4 medium-sized russet potatoes (or 6 smaller ones)
  • 2 tablespoons avocado oil
  • Spice mix (from above)
  • Flaky sea salt and fresh parsley for garnishing

Garlic Aioli:

  • ½ cup mayonnaise
  • 2 cloves fresh garlic, minced
  • ½ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • Juice of ¼ lemon

Optional Substitutions:

  • Swap russet potatoes for sweet potatoes for a sweeter twist.
  • Use olive oil instead of avocado oil if preferred.
  • Replace mayonnaise in the aioli with Greek yogurt for a lighter dip.

Instructions

Step 1: Prepare the Potatoes

Thoroughly wash the potatoes and slice them into wedges. To do so, cut each potato in half lengthwise, then cut each half into 4 to 8 wedges, depending on the size of the potato. This should result in 8 wedges per medium potato.

Step 2: Soak the Potatoes

Place the sliced wedges in a large bowl filled with cold water and ice. Let them sit for 10 minutes to remove excess starch, which helps make the wedges extra crispy.

Step 3: Preheat the Air Fryer or Oven

While the potatoes are soaking, preheat your air fryer (or oven) to 400°F. Mix together the spices in a small bowl.

Step 4: Season the Wedges

Drain the potatoes and pat them completely dry with paper towels. In a large bowl, toss the wedges with avocado oil and the prepared spice mix, ensuring each wedge is well-coated.

Step 5: Air Fry the Potatoes

Carefully place the wedges in the air fryer basket, ensuring they are in a single layer. Cook at 400°F for 15 minutes, checking on them at 12 minutes to avoid over-crisping. Flip the wedges if necessary.

Oven Instructions: If using an oven, bake on a parchment-lined baking sheet at 400°F for 30-33 minutes, flipping halfway.

Step 6: Prepare the Garlic Aioli

While the wedges are cooking, prepare the garlic aioli. Combine ½ cup of mayonnaise, 2 minced garlic cloves, ½ teaspoon garlic powder, ¼ teaspoon sea salt, and the juice of ¼ lemon in a small bowl. Stir well.
