Description

This roasted butternut squash is a cozy, caramelized side dish made with brown sugar, cinnamon, and olive oil. Ready in just 30 minutes, it’s perfect for fall dinners, holiday tables, or a healthy weekday meal.

Ingredients

Scale
  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Peel and cube butternut squash into 1-inch pieces.
  3. In a large bowl, toss squash with olive oil, brown sugar, salt, pepper, and cinnamon.
  4. Spread evenly on the prepared baking sheet, leaving space between cubes.
  5. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
  6. Optional: Broil for 1–2 minutes at the end for extra crispiness.
  7. Serve warm and enjoy.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For deeper flavor, use dark brown sugar.
  • Add chopped pecans halfway through roasting for extra crunch.
  • Reheat in the oven or air fryer for best texture.
