- 1 inch Ginger, minced
- 2 cloves Garlic, minced
- 1 teaspoon Smoked Paprika
- 1 teaspoon Red Pepper Flakes
- 4 cups Low-Sodium Vegetable Broth
- Salt and Ground Black Pepper, to taste
- Olive Oil, for sautéing
- Coconut Cream, for garnish
- Fresh Basil Leaves, for garnish
Optional Substitutions:
- For a creamier texture, use cashew cream instead of coconut cream.
- Add a squeeze of lime juice for a citrusy zing.
- Replace vegetable broth with chicken broth if not vegan.
Instructions
Step 1: Sauté the Ingredients
- Set the instant pot to sauté mode. Add a drizzle of olive oil and let it heat until it shimmers.
- Add in the onions, carrots, ginger, and garlic. Sauté for about 4-5 minutes until fragrant and the onions become translucent.
Step 2: Add Spices and Sweet Potatoes
- Sprinkle in the smoked paprika and red pepper flakes, stirring constantly to toast the spices.
- Add the diced sweet potatoes and cook for an additional 2-3 minutes, allowing the flavors to meld.
Step 3: Pressure Cook
- Pour in the vegetable broth. Give everything a good stir, making sure no bits are sticking to the bottom.
- Seal the lid and set the instant pot to pressure cook on high for 4 minutes. Once the cooking time is up, perform a quick release to safely remove the steam.
Step 4: Blend to Perfection
- Using a stick blender, blend the soup until smooth. If you prefer a chunkier texture, pulse the blender a few times until the desired consistency is achieved.
- Alternatively, transfer the soup to a traditional blender in batches and blend until creamy.
Step 5: Serve and Garnish
- Ladle the soup into serving bowls. Top each with a swirl of coconut cream and a few fresh basil leaves for a pop of color and flavor.
