  • 1 medium-sized Yellow Onion, finely chopped
  • 1 inch Ginger, minced
  • 2 cloves Garlic, minced
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Red Pepper Flakes
  • 4 cups Low-Sodium Vegetable Broth
  • Salt and Ground Black Pepper, to taste
  • Olive Oil, for sautéing
  • Coconut Cream, for garnish
  • Fresh Basil Leaves, for garnish

Optional Substitutions:

  • For a creamier texture, use cashew cream instead of coconut cream.

Instructions

Step 1: Sauté the Ingredients

  • Set the instant pot to sauté mode. Add a drizzle of olive oil and let it heat until it shimmers.
  • Add in the onions, carrots, ginger, and garlic. Sauté for about 4-5 minutes until fragrant and the onions become translucent.

Step 2: Add Spices and Sweet Potatoes

  • Sprinkle in the smoked paprika and red pepper flakes, stirring constantly to toast the spices.
  • Add the diced sweet potatoes and cook for an additional 2-3 minutes, allowing the flavors to meld.

Step 3: Pressure Cook

  • Pour in the vegetable broth. Give everything a good stir, making sure no bits are sticking to the bottom.
  • Seal the lid and set the instant pot to pressure cook on high for 4 minutes. Once the cooking time is up, perform a quick release to safely remove the steam.

Step 4: Blend to Perfection

  • Using a stick blender, blend the soup until smooth. If you prefer a chunkier texture, pulse the blender a few times until the desired consistency is achieved.
