Originating from the heart of Italy, lasagna has earned its place as a beloved comfort food worldwide. However, we’re putting a twist on tradition with our Spiral Vegetable Lasagna. This innovative take infuses the classic dish with vibrant veggies, making it not only delicious but also nutritious. As we embark on this cooking adventure, let’s celebrate the joy of reinventing culinary classics!

Ingredients

Scale
  • 15 lasagna noodles, cooked
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups fresh spinach, washed and chopped
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta, Parmesan, eggs, salt, and pepper.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  4. Add spinach to the skillet and cook until wilted. Remove from heat and let cool.
  5. Spread each lasagna noodle with a layer of the ricotta mixture, followed by a layer of spinach.
  6. Carefully roll each noodle up tightly and place in a baking dish standing on end.
  7. Pour marinara sauce over the noodles and top with shredded mozzarella.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes or until cheese is bubbly and golden.
  9. Let stand for 10 minutes before serving.

Notes

  • For a time-saving option, use no-boil lasagna noodles.
  • Customize your lasagna by adding your favorite vegetables or protein.
  • Allow the lasagna to cool slightly before slicing for cleaner servings.
