Description

A quick, creamy, and low-carb keto cheesy ground beef and broccoli skillet that’s perfect for busy weeknights or meal prep.


Ingredients

  • 1 lb ground beef
  • 3 cups broccoli florets
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp olive oil
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup heavy cream
  • 2 tbsp cream cheese
  • 1/2 tsp Dijon mustard

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the onions until translucent, about 3–4 minutes.
  3. Add garlic and ground beef. Cook until the beef is browned and cooked through, about 6–8 minutes. Drain excess grease if needed.
  4. Season with smoked paprika, salt, black pepper, and optional red pepper flakes. Stir to combine.
  5. Steam or blanch broccoli for 3–4 minutes until just tender and bright green.
  6. Add broccoli to the skillet and mix with the beef.
  7. Reduce heat to low and stir in cream cheese, heavy cream, and Dijon mustard. Mix until the sauce is smooth and creamy.
  8. Top with shredded cheddar and mozzarella. Cover and cook for 2–3 minutes until cheese is melted.
  9. Remove from heat and serve hot. Garnish with extra red pepper flakes if desired.

Notes

  • Do not overcook broccoli to maintain a firm texture.
  • Use freshly shredded cheese for the best melt and texture.
  • Broil for 2–3 minutes for a crispy cheese topping if your skillet is oven-safe.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
