Instructions

Step 1: Season the Salmon

  • Pat your salmon fillets dry with a paper towel to ensure crispy searing.

  • Season both sides with salt and pepper.

Step 2: Sear the Salmon

  • In a large non-stick or cast iron skillet, heat 1 tablespoon olive oil over medium-high heat.

  • Place the salmon skin-side down (if using skin-on) and sear for 3–4 minutes per side, until golden brown and cooked through.

  • Remove from skillet and set aside.

Step 3: Cook the Mushrooms and Garlic

  • In the same skillet, add the remaining olive oil.

  • Toss in the sliced mushrooms and cook for 5–7 minutes, until browned and soft.

  • Add the minced garlic and cook for an additional minute until fragrant.

Step 4: Wilt the Spinach

  • Add fresh spinach and stir gently until wilted, about 2–3 minutes.

Step 5: Build the Creamy Sauce
