    • ¼ tsp salt
    • 2 tsp smoked paprika
    • 1 tsp Italian seasoning
    • 2 tbsp olive oil
    • ½ lemon, thinly sliced
    • 4 cloves garlic, minced
    • 4 tbsp butter
    • 8 oz spaghetti
    • 8 oz Burrata cheese
  • For Garnish:
    • ½ cup fresh basil, chopped
    • ⅓ cup pine nuts, lightly toasted

Optional Substitutions:
For a dairy-free option, replace the Burrata with a vegan cheese. Gluten-free pasta can also be used for those with gluten sensitivities.


Instructions

Step 1: Prepare the Roasted Tomatoes

  • Preheat your oven to 400°F. Toss halved cherry tomatoes with olive oil, minced garlic, salt, and pepper.
  • Spread on a parchment-lined baking sheet. Roast for about 20 minutes or until the tomatoes are soft and slightly caramelized.

Step 2: Cook the Chicken

  • Season the thinly sliced chicken breasts with salt, smoked paprika, and Italian seasoning.
  • In a large skillet, heat olive oil over medium heat and cook the chicken for about 5 minutes on each side until fully cooked.
  • Remove from the skillet and slice thinly.

Step 3: Prepare the Lemon Garlic Sauce

  • In the same skillet, add lemon slices, minced garlic, and butter. Cook on low-medium heat for 2-3 minutes to release the lemon’s juices and soften the garlic. Remove from heat.

Step 4: Cook the Spaghetti
