Ingredients

Scale

200 g self-raising flour: Sifted for a light, airy batter.1 tsp salt: Enhances the flavor of the cheese.250 ml milk: Use any type of milk, but whole milk gives the best texture.1 egg: Binds the ingredients together.110 g mature cheddar cheese: Coarsely grated for a rich cheesy flavor.40 g Parmesan cheese: Finely grated to add a nutty, sharp note.10-15 g chives: Finely chopped, providing a subtle onion-like flavor.Optional Ingredients:Substitutes for dairy allergies: Replace the milk with almond or oat milk, and use vegan cheese instead of cheddar and Parmesan.

Instructions

  1. Prepare the Batter: Sift the self-raising flour and salt into a large bowl. In a separate jug, whisk together the milk and egg.
  2. Combine Ingredients: Make a well in the center of the flour, then slowly pour in the milk-egg mixture. Whisk as you go, ensuring a smooth, lump-free batter.
  3. Add Cheese & Chives: Gently fold in the coarsely grated cheddar, finely grated Parmesan, and chopped chives. This will evenly distribute the flavor throughout the pancakes.
  4. Heat the Pan: Melt butter with a teaspoon of oil in a frying pan or on a griddle over medium heat. Once the butter sizzles, it’s ready.
  5. Cook the Pancakes: Drop a tablespoon of batter onto the pan for each pancake, making sure not to overcrowd. Cook until bubbles form around the edges (about 2-3 minutes), then flip and cook the other side until golden brown.
  6. Keep Warm: Wrap cooked pancakes in a clean tea towel while you finish the rest.

Notes

  • Test First: Cook a test pancake to gauge the heat of your pan. Adjust the heat if the pancakes cook too quickly or not fast enough.
  • Consistent Pancakes: Use a tablespoon to ensure uniform pancake sizes.
  • Reheating: To maintain the fluffy texture, reheat your pancakes in the microwave, not the oven.
