- 1 medium red bell pepper, chopped
- 1 ½ cups refried beans
- ¼ teaspoon pepper
- ¼ cup water
Burritos:
- 2 cups Mexican rice
- 1 cup canned corn
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
Instructions
Step 1: Prepare the Chicken Filling
- Combine the salt, pepper, chili powder, cumin, smoked paprika, and dried oregano in a bowl.
- Heat the olive oil in a skillet over medium-high heat.
- Add the chicken and sprinkle the spice mixture over it. Cook until the chicken is fully cooked through.
- Remove the chicken and set aside.
- In the same skillet, sauté the chopped onion, garlic, and bell pepper until soft.
Step 2: Assembling the Burritos
- Warm the tortillas according to the package instructions.
- Spread a layer of refried beans on each tortilla.
- Add a portion of the chicken filling, Mexican rice, corn, and shredded cheddar cheese.
- Fold in the sides and roll the tortillas tightly.
Step 3: Baking the Burritos

- Place the burritos seam-side down on a parchment-lined baking sheet.
