  1. Crust Setup: Start by preheating your oven to 325°F (162°C). In a medium bowl, combine crushed digestive biscuits, melted butter, and granulated sugar. Mix well until everything is combined. Then, press the mixture firmly into the bottom of a greased 9-inch springform pan. Set aside.
  2. Cheesecake Base: In a large mixing bowl, blend the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy. Add the eggs one at a time, beating well after each addition. Finally, fold in the sour cream to give the cheesecake its signature tangy flavor and smooth texture.
