Today, I’m going to walk you through one of my favorite treats: Strawberry Cream Cheese Cookies. These cookies are the perfect combination of fruity and creamy goodness. Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chopped fresh strawberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
These ingredients work together to create a perfect balance of flavors and textures. Feel free to substitute gluten-free flour if necessary, or swap out the sugar for a low-carb sweetener if you’re watching your sugar intake. Keep in mind that any changes might slightly alter the taste and texture, but they will still be delicious!
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy. Then, add the egg and vanilla extract, beating until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined. Be sure not to overmix, as this can result in tougher cookies.
- Gently fold in the chopped fresh strawberries. This will give your cookies that lovely, fruity burst of flavor.
- In another bowl, combine the cream cheese and powdered sugar until smooth and creamy.
- Take about 1 tablespoon of dough and flatten it in your hand. Add a small spoonful of the cream cheese mixture into the center of the dough. Fold the dough around the cream cheese to seal it inside, and roll into a ball.
- Place the cookies onto the prepared baking sheet and gently press down slightly.
- Bake for 12-15 minutes, or until the edges are golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
