  • 14 oz (400 g) mushrooms, quartered
  • ½ onion, minced
  • 10 oz (300 g) fresh spinach
  • ½ cup (125 ml) low-sodium vegetable broth
  • Fresh cracked pepper, to taste
  • 1 teaspoon Italian seasoning
  • ½ cup parmesan cheese, grated
  • 1 teaspoon red chili pepper flakes (optional)

Instructions

Step 1: Cook the Quinoa

Start by rinsing the quinoa under cold water. Add it to a pot with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat and simmer for about 15 minutes or until all the water is absorbed and the quinoa is tender. Set aside.

Step 2: Sauté the Mushrooms

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the quartered mushrooms and cook for about 3 minutes, stirring occasionally, until they are golden brown. Add the minced garlic and cook for an additional 30 seconds. Pour in a bit of vegetable broth to deglaze the pan and cook for another minute. Remove the mushrooms from the skillet and set aside.

Step 3: Cook the Spinach

In the same skillet, add the remaining tablespoon of olive oil. Toss in the minced onion and cook until it becomes translucent, about 1 minute. Add the fresh spinach and cook until it wilts, about 2-3 minutes. Season with salt and pepper to taste.

Step 4: Combine Everything

Push the spinach to one side of the skillet, add the cooked quinoa and mushrooms back into the pan. Toss everything together to combine. Sprinkle in the parmesan, Italian seasoning, and red chili flakes (if using), stirring gently until everything is well incorporated.
